This Ginger’s No Minger (AKA Ginger Kraut)
Simply cabbage with ginger and cardamom pods, but so delicious. This is my current favourite.
Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is also a very good source of manganese, dietary fibre, potassium, vitamin B1, folate and copper. Additionally, cabbage is a good source of choline, phosphorus, vitamin B2, magnesium, calcium, selenium, iron, pantothenic acid, protein and niacin. It is good for the brain and is useful in the treatment of neural disorders such as Alzheimer’s disease. The other nutrients present in cabbage, such as vitamin-E, keep the skin, eyes, and hair healthy. The calcium, magnesium, and potassium found in cabbage are very useful for a wide range of health benefits.
Cardamom is used for digestion problems including heartburn, intestinal spasms, irritable bowel syndrome (IBS), intestinal gas, constipation, liver and gallbladder complaints, and loss of appetite.
